I had pizza last night from Marco’s Coal-Fired Pizzeria in Denver. Since I’m generally a snob about pizza (when you’ve lived in a place with the best pizza in the world outside of Italy, that’ll happen), I generally stay away from “authentic pizza.” But I had a feeling this would be different for a reason.
They make pizzas with NYC water. Let me repeat that: the man sources his water from New York which means the crust tastes how it should - chewy, soft and a little like the East River.
Basically, the pizza was amazing. And then we polished it off with a Nutella pizza. I don’t think I have to convince you that was good too, but here’s a picture anyhow.
